\n3<\/span> (15-ounce) cans of cannellini beans, divided<\/li>\n4 cups<\/span> vegetable broth, divided<\/li>\n1 tablespoon<\/span> olive oil<\/li>\n1<\/span> small yellow onion, diced<\/li>\n2<\/span> medium carrots, diced<\/li>\n2<\/span> sticks celery, diced<\/li>\n3<\/span> cloves garlic, minced<\/li>\n1 tablespoon<\/span> minced fresh rosemary<\/li>\n1 teaspoon<\/span> dried thyme<\/li>\n1\/2 teaspoon<\/span> ground turmeric<\/li>\n1 1\/2 teaspoons<\/span> kosher salt<\/li>\n1 teaspoon<\/span> ground black pepper<\/li>\n1\/2 teaspoon<\/span> crushed red pepper flakes<\/li>\n1\/2 cup<\/span> ditalini pasta<\/li>\n2 cups<\/span> chopped baby spinach<\/li>\nJuice of one<\/span> lemon (about 2 tablespoons<\/span>)<\/li>\n1\/4 cup<\/span> Parmesan cheese<\/li>\n<\/ul><\/div>\n<\/div>\n \n\n

\nRinse and drain 1 can of the beans. Place the beans in a blender or food processor with 1 cup of the broth. Blend until smooth and set aside. Rinse and drain the remaining beans and set these aside as well.<\/li>\n In a large pot, heat the olive oil over medium heat. Add the onion, carrots, and celery and cook until softened, about 7 minutes. Add the minced garlic and cook for an additional minute.<\/li>\n Add the pureed bean mixture, whole beans, remaining broth, rosemary, thyme, turmeric, salt, pepper, and crushed red pepper. Bring to a boil and simmer for 10 minutes, then add in the ditalini pasta, stir, and reduce the heat to medium-low. Allow the soup to simmer for 15 minutes, or until the pasta is cooked.<\/li>\n Add in the spinach and cook for 5 more minutes. Stir in the fresh lemon juice and Parmesan cheese, and additional salt and pepper if desired.<\/li>\n Serve immediately.<\/li>\n<\/ol>\n<\/div>\n<\/div>\n \n\n
